Ingredients: 1 Cup Finely chopped or grated carrots, 1 Cup Finely chopped cabbage, 1/4 Cup All purpose flour/Maida , 1/4 Cup Corn starch, 1 tsp corn starch for gravy, Crushed Garlic 1 tbsp, Crushed Ginger 1 tbsp, Coarse Onions Paste 1 Cup, Coarse Tomato Paste 1 Cup, Soya Sauce ½ tsp, Vinegar 1 tbsp, Red Chilli sauce 1 tbsp, Tomato Sauce 1 tbsp, 2 Red dried whole chillies, Ajinomoto/Chinese salt 1 tsp, Black Pepper per taste, Salt per taste, Chopped coriander leaves for garnishing, Oil for frying.
Method: Mix carrots, cabbage, All purpose flour, corn starch, salt together to make a dough. There will be no water or a little water required to make the dough as the chopped vegetables will be enough to wet the flours. Make small balls with the prepared dough and deep fry them on medium heat till they are crispy. Keep the fried dumplings aside. In a big Pan heat 1 tbsp oil on high. Put whole chillies in hot oil for the spicy aroma. Now put the crushed garlic in the oil. After 1 min add the Onions , tomato and ginger paste. When the masala is translucent put Ajinomoto salt, black pepper. Mix 1 tsp corn starch in 1 Cup of water and add to the above fried masala. Let the gravy simmer for 4 minutes with stirring it continuously. Add soya sauce, vinegar, chilly sauce and tomato sauce in the gravy and mix it properly. In the last add the fried dumplings and let it simmer for another 2-3 minutes.
Serve the Manchurian with little garnishing of chopped coriander leaves with rice or paranthas.
